    What is hydration in pizza dough?▾

    Hydration is the water weight as a percentage of the flour weight. Neapolitan dough is usually 58–65%, New York style about 60–65% and pan pizza 70% or more.

    How much dough do I need for one pizza?▾

    About 250 g makes a 10–12 inch Neapolitan pizza, 280 g a 14 inch New York pizza and around 400 g a 10×14 inch pan pizza.

    How do I convert instant yeast to active dry or fresh yeast?▾

    Use about 1.3 times as much active dry yeast and 3 times as much fresh yeast as instant yeast. For 4 Neapolitan pizzas at 0.3% instant yeast you need about 1.8 g.
